Working with the corporate F&B leadership team of Fairmont Hotels and Resorts, we developed global menu optimisation guidelines and a comprehensive menu development process for their portfolio of over 90 properties, including 30 new openings and numerous restaurants and bars.

This project entailed a robust R&D program, extensive stakeholder engagement, competitor analysis, multiple pilot programs, and the creation of detailed guidelines along with change management support.

The outcome was a transformative approach to the menu development process, which honors the diverse styles and cuisines offered across Fairmont venues. The guidelines feature a clear framework grounded in thorough research, experimentation, and trials. They leverage behavioural science practices, psychologically-based pricing strategies, guest and occasion modelling, branding principles, and advanced design techniques.

The program has been implemented globally across all Fairmont Hotels and Resorts, with an optional support service available to assist with the transition.
