Working in partnership with KAM on current and potential consumer understanding, we focused on foresight, future customer profiling and trends analysis, workshop facilitation and strategy development.
The project followed a structured six-phase process — from discovery and research through to strategy development, refinement and action planning. Five concurrent research strands were delivered: current customer insights, macro pub customer analysis, wider market research, future customer profiling and future consumer trends.
This comprehensive approach allowed us to understand not only where Hall & Woodhouse sits today, but how the business fits within the wider pub and hospitality sectors — and where it needs to be in order to future-proof its proposition.
The project delivered a fundamental shift in Hall & Woodhouse's expansion strategy, refocusing the business on multi-faceted venues designed to evolve into the modern version of a destination pub — one that serves its local community through a greater emphasis on broader property utilisation beyond pure traditional pub retailing.
Supported by a library of consumer research, an insight-based strategic direction document and an operational action plan, the recommendations translated into concrete actions with clear timelines, responsibilities and budgets anchored within the organisation.
