Moon is a much-loved, family-run Slavic restaurant in Tallinn. After building a loyal following in its original 50-seat location, the owners moved to a significantly larger site with 150 covers, a more substantial kitchen and far more complex operational requirements. The systems and ways of working that had supported a successful small restaurant were no longer suited to an operation three times the size. Think Hospitality was engaged to help Moon scale effectively while protecting the warmth, character and personal service that had made it so successful.
We developed a comprehensive growth strategy covering staffing, operations, technology, pricing and marketing. We reviewed the restaurant’s standard operating procedures, introduced clearer structures and responsibilities and identified opportunities to create memorable service moments throughout the guest journey. A key priority was building a stronger management structure that would allow the restaurant to operate successfully without the owners being involved in every daily decision. We worked with the team to establish greater accountability, equip managers to take on new responsibilities and create a more consistent and efficient way of working across the business.
With a stronger operational and management structure in place, Moon successfully made the transition from an intimate family-run restaurant into a much larger and more commercially robust operation. The restaurant has since increased its revenue fivefold and its profit tenfold. The owners have been able to step away from daily operations and focus on other projects, while the team benefits from clearer responsibilities, better systems and a more supportive working structure.
