Siigur Restaurant Group is one of Estonia's best-known and most respected restaurant groups. Its portfolio has received extensive Michelin recognition, with several restaurants awarded Bib Gourmand distinctions or featured in the Michelin Guide, and NOA Chef's Hall holding a Michelin Star. Think Hospitality has partnered with the group for more than seven years. Our relationship began with a comprehensive strategic and business review. Although the group was already performing well, the owners wanted an independent perspective on where improvements could be made and how the business should evolve, including the potential for further expansion in Estonia and across the Nordic region.
We conducted an in-depth review across the group's operations, service, marketing, social media, technology and approach to innovation, translating our findings into clear and actionable recommendations. Our work also addressed the group's organisational structure and wider brand strategy, with a particular focus on creating stronger differentiation between its individual restaurant concepts while maintaining the reputation of the group as a whole.
As a next step, we delivered a series of workshop days for the group's head chefs and general managers. These sessions strengthened their broader restaurant management capabilities, with a particular focus on financial performance, commercial decision-making and giving leaders the tools to take greater ownership of their restaurants. Our partnership has since expanded to include support with tenders for restaurant opportunities within major real estate developments, as well as the group's move into hotel operations.
The programme gave Siigur Restaurant Group's management teams greater confidence, stronger commercial understanding and a more complete set of tools with which to manage their restaurants. Head chefs and general managers became better equipped to understand performance, make informed decisions and take greater ownership of their roles.
This created clearer accountability across the group and gave the owners greater confidence in their leadership team, allowing them to focus more of their time on the strategic direction of the business, new opportunities and long-term growth. The work established a stronger management foundation for the group's continued development while helping its individual restaurant brands maintain the distinct identities and high standards behind their Michelin recognition.
